Taste: soft, sweet notes followed by delicate hints of fruits and citrus; balanced, harmonious with a long and persistent (slightly bitter) nose-palate finish
Serve with: raw fish and carpaccio, oysters, anchovies with salt-butter, spicy white pasta dishes and truffle dishes, blue fish (anchovies, sardines, mackerel), dried cod, seafood, fish and vegetable tempura, cheeses with unwashed rinds, goat's cheeses, blue cheeses and custard tarts
